We received an email from a young chef over the weekend – which is happening with increasing frequency and we like it – who wrote asking who to turn to in looking for a good source for small, glass sauce dishes to go with her white dinnerware. Based in Indianapolis, Isinglass has been doing it right  since 2004 and, while they might not be the sexiest product line in foodservice, industry insiders tell me that they are reliable and give a great product for a good price. Besides….isn’t the sexy part of the meal coming from you, the chef, anyway!
