This is the “Outrenoir”, a knife designed by André Bras, brother of famed restaurateur Michel Bras and La Forge de Laguiole for the “Café Bras” restaurant at the Soulages Museum in Rodez, Aveyron. This dishwasher-friendly Laguiole knife is an ode to both gastronomy and to the art of painting.

Tabletop’s role in elevating the guest dining experience continues to be at the forefront of our focus. And, we can hardly think of anything that could so positively impact the guest experience than the handcrafted knives from France’s Forge de Laguiole.

With each knife taking several hours – even days – to create, there are over 40 successive steps are needed to achieve just one knife. The quality of each knife’s finish, the strength of its blade and its spring, the thickness of its bolsters and plates, as well as the accuracy of its calibration are the elements that contribute to its quality and longevity. Forge de Laguiole integrates all these manufacturing steps.
Taking “handcrafted” from “local materials” to a whole new level, Forge de Laguiole uses blades and other components that are forged in the village of Laguiole, France. Honoring centuries-old traditions, each model is assembled and shaped by the same cutler to assure accountability and pride of ownership of the final piece. The lines of each knife must respect the general profile determined by the Laguiole cutlers of the nineteenth century and today those same lines inspires many designers. Forge de Laguiole offers several types of forged steels to please aficionados of traditional Laguiole style as well modern knives. Carbon steel is the oldest, appreciated by collectors, it has a perfect edge and seasoned gracefully by changing colors and patina. The new T12 steel used by Forge de Laguiole is unalterable, while retaining its luster and sharpness over the years. And, remember…each knife is unique because it is entirely hand made by an expert cutler.

Forge de Laguiole has a variety of knife collections for cusotmers to choose from, along with a range of knives in each collection to select from. Whether it’s their Traditional and Collector series or their very upscale Designer series, with knives designed by Philippe Starck, André and Michel Bras, Yan Pennor and a number of other well-known designers, there is any one of a number of ways to impress your carnivore dining guests. They have been designing and producing superior quality knives in the Laguiole area for nearly 200 years.

A selection of knives from the company’s famed Designer series. So…with the world of steakhouses and other meat-drive concepts evolving to higher and higher price points, isn’t it about time that you considered giving your steak knives an upgrade, as well?
