With a resume that is steeped in a wide variety of food & beverage experiences, Chef Bryan Dillon has seen just about everything in his culinary career. From managing hotel and casino openings to being Corporate Executive Chef for a large national chain, Bryan has never been shy about taking on tough challenges – and he’s done it on both coasts and in between.

As Bryan looks for his next great food & beverage adventure, we were lucky enough to get him to sit with us recently to discuss his career, trends in F&B and some of the differences in his many experiences. And, of course, we asked him his opinions on tabletop and its role in the dining experience.
